Yield:  Makes 24 oat cakes
RECIPE INGREDIENTS
2 cups rolled oats
1 cup flour
2 cups buttermilk
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons sugar
1 minced apple
1/4 cup oil
1 tablespoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
DIRECTIONS
Mix all ingredients in a bowl until well combined. Pour by 1/4 cupfuls onto hot, greased griddle. Grease griddle after each batch of cakes. Cook until small bubbles form on the top and burst and underside is a golden brown. Flip cake over and cook until a golden brown.


May be stored in refrigerator and heated in oven or toaster.

good
I add flax seed, oat and wheat bran,use any kind of fruit and nuts, double the recipe and we eat the leftovers for easy breakfasts or a quick snack. They last for days and nuke in no time.
