Asparagus Casserole

My family expects this casserole at Easter and Christmas. I am always asked for this recipe.
3 hard boiled eggs
2 packages chopped frozen asparagus
1 can cream of mushroom soup
1 chopped onion
2 eggs
2/3 cup cracker crumbs
3 pieces bacon, chopped
1/2 cup shredded cheddar cheese
2 Tablespoons melted butter
Salt & Pepper to taste
1. Spray or butter a casserole dish.Place cracker crumbs on bottom of dish.

2. Mix all ingredients together except bacon.

3. Pour over cracker crumbs.

4. Spread chopped bacon over top.

Serves 8

5. Bake at 350 degrees for 45 minutes or til set.

I served this for Thanksgiving dinner, and everyone liked it - many came back for seconds. The recipe didn't specify the weight of the package for the asparagus, so I used to 8 oz packages of frozen spears, cut into small pieces. I also added an extra hard-boiled egg, a little more cheese, and I think I would prefer the cracker crumbs on top of the casserole with the bacon rather than on the bottom. I'll try that next time. This recipe is definitely a keeper.
