Bama garden rotisserie hurry curry

Quick easy and no hot kitchen for the summer. grab a deli rotisserie chicken. Colors are vibrant and happy. Serve with toasted baggets or facoccia bread and garlic butter healthy, refreshing, filing and delicious.
RECIPE INGREDIENTS
Rotisserie chicken (chopped or diced) 3 cups
Peppers diced (Red, Yellow, Green & Orange Bell)1 1/2 cup
Celery diced 1 cup
Onion sweet(diced)1/2 cup
Carrots diced 1/2 cup
grape tomatoes (to personal taste)
mixed green salad (I prefer sweet butter and romaine)
chopped dates 1/2 cup
1/4 cup dried cranberries
Sesame seeds 1/8 cup
Sunflower seeds 1/4 cup
2 tablespoons of prepared horsradish
curry powder 3 tablespoons
Plain or vanilla yogurt 3 cups
Salt to taste
*for an alternate flavor add dry packet of Ranch to yogurt. and for a richer taste sub mayonnaise for yogurt.
DIRECTIONS
Mix yogurt, horsradish, dates and curry powder together in covered bowl and set in refrigerator.


Chop the chicken, peppers, onion, celery, and carrots. Toss these together with cranberries, sesame seeds, and sunflower seeds. Then mix prepared yogurt and chicken mixtures together about one hour before you serve.


When you are ready to eat, place generous portion on top of bed of greens and tomatoes, with a dash of salt.


The chicken mixture provides ample dessing for the greens.
