Make sure to taste the pears before adding all the sugar, since some pears are sweeter than others.
- 4 tablespoons unsalted butter
- 3 ripe Bartlett pears, peeled, cored and coarsely chopped
- 3 tablespoons brown sugar
- 1 pint French vanilla ice cream
In a medium skillet heat the butter on medium heat until melted. Add the pears and sauté for about 3 minutes, or until nicely softened, stirring occasionally. Add the brown sugar and mix to combine until the sugar is melted, about another minute. The pears will begin to break down and make more sauce.
Arrange scoops of ice cream in individual bowls. Spoon the pear compote over the ice cream and serve immediately.
