6 cups cut up butternut squash
4 cups chicken broth
16 oz cream cheese
salt & pepper to taste
fresh ground nutmeg
pumpkin seeds for BAM factor
Butternut Squash Soup Recipe at
Cook squash in chicken stock (add water to cover squash if needed.)When cooked, puree, this may be done in batches. Add cream cheese, salt & pepper and fresh ground nutmeg. heat til all mixed thru do not boil.

Enjoy! I serve with pumpkin seeds adds a nice crunch.

We tried this recipe but it needs some help
Terrible.. cream cheese overpowered the recipe and we could barely taste the squash. I tried seasoning it with garlic pepper, seasoned salt and even tabasco and nothing helped. It was a throw away recipe.
