Chicken Kupsa (Kabsa, Kapsa, Kapsah)

Middle Eastern, spicy chicken and rice. Traditionally, this is a dish that is placed in the middle of the table on a platter and eaten with one’s hand (not a requirement but the kids love it!)
3-4+ lbs chicken parts or 1 whole cut-up
1 Tbsp oil (Canola)
1 sm-med onion chopped (1 ½ cups)
1 tsp. salt
¼ tsp. black pepper
1 tsp. cardamom
1 tsp. cumin
1 tsp. curry powder
1 beer - Not traditional - can substitute water or broth
2 diced tomatoes or 1 can of diced tomatoes
1½ C. white rice – any type will work – I prefer extra long grain
½ Tsp salt
2 C. water
Hot Sauce ingredients:
2/3 C. reserved liquid from pot
½tsp. cardamom
½tsp. cumin
½tsp. curry
several drops Tabasco
¼ - ½ tsp cayenne or crushed hot pepper (or both for heat lovers)
This is a very forgiving recipe. You can use more or less chicken, more or less onion, substitute tomato sauce for the diced tomatoes, omit the beer (substitute water or broth) etc. and you will still have a delicious meal. Traditionally this is a dish that is placed in the middle of the table on a platter and eaten with one’s hand (not a requirement but the kids love it!)

Heat oil in large heavy pot (8 qt. +/-)

Place chicken parts in bottom of pot, sprinkle with salt and pepper and brown well on both sides over medium/high heat.

Add onions, spices, beer and tomatoes to pot.

Cover and simmer till chicken is tender and cooked – about ½ Hr. Remove chicken to a platter or dish. Reserve about 2/3 cup of the liquid to a small sauce pan for hot sauce (see recipe below). To remaining liquid in large pot add 2 cups water, 1 to 1 ½ cups rice, and ½ tsp. salt (or to taste). Stir and increase heat to high.

After bringing to a boil turn heat to lowest and cook rice till tender – about 20 minutes. Add the chicken back to the pot for 5-10 minutes to heat. Serve with hot sauce (see below) on the side.


Simmer in small sauce pan while rice is cooking. If sauce becomes too thick, add a small amount of water or beer to thin. Serve on the side.
