Cucumber and Artichoke Salad

Total Time:  30 Minutes
Great for a take-along dish. A good replacement for a mayo based salad. Refreshing and easy on the waist-line.
RECIPE INGREDIENTS
A great take along dish...
1 medium sized cucumber, sliced in thin rounds
1 package frozen artichokes, cook according to directions,drain then cool
1 medium sized red onion, sliced
1/4 cup fresh chopped basil
1/2 cup black olives
1/2 cup chick peas
3/4 cup mozarella cheese, cubed
Dress with your favorite vinaegrette or bottled Italian dressing
DIRECTIONS
Combine all ingredients, add dressing and refrigerate until service. Although tastes best at room temp. Serve with crusty French bread.
