Curried Seafood Salad

excellent main dish salad with loads of seafood. or a light lunch for company
1 cup uncooked long grain rice
1 can tuna - 6-7 oz size
1 lb med. shrimp or 1 lb bay scallops or 1 lb loster meat or a mix of the the seafood equal to one pound.
2 stalks celery - diced
3/4 cup mayo
1/4 cup milk
2 tablespoons olive oil
1 1/2 teaspoons curry powder
2 tablespoons lemon juice
cook rice per package directions - after done place in large bowl and refrigerate.

Cook shrimp in boiling water till it curves into a "c" shape. (about 2 minutes in boiling water) If using Scallops or Lobster, saute in olive oil until done, drain - do not over cook any shellfish. After done place all seafood in small bowl and refrigerate until chilled.

Put mayo, milk, oil, curry and lemon juice in small bowl and mix gently with a spatula.

To assemble, drain tuna and put in bowl with rice. Mix in celery. while doing this make sure you break up any and all rice clumps. Add seafood and then pour dressing over mixture and gently stir to coat. Refrigerate at least one hour. To serve place leaf lettuce on plate and mound seafood mix on top.
