Easy Bologna and egg spread

I make this for my family as sandwiches with lettuce, tomatoes and dill pickles and or quests with saltine crackers and they love it. Ask for the recipe every time
RECIPE INGREDIENTS
1/4 inch piece all beef bologna (from service deli)
6-8 hard boiled eggs
salt and pepper to taste
3 Tbl. Mayonnaise
1 teaspoon reg. mustard or dijon
2 green onions thinly sliced whites only (optional)
1/2 jalapeno finely chopped (optional)
DIRECTIONS
Boil eggs until hard boiled and put ice water on them for quick chilling and peel. Mince bologna then chop eggs in same bowl. Salt & pepper to


taste. Add mayo then mustard on top and mix. Should look like deviled eggs. Add the onions & jalapenos in the mix or just put them on top, or don't add them at all. Cut bread in shapes, any kind of cracker or chips go well. Fast and easy for a football dip or spread, or for just a sandwich.

Ground Bologna Sandwich....boring
Made this dip because my family likes bologna. I don't know what I was thinking but this tastes just like a ground up bologna sandwich. My kids didn't like the texture. My husband and I thought it was ok. Maybe the eggs dilute the bologna taste but it was just ok. Not worth the trouble of making and definitely not good enough to serve to guests. I was hoping that with the addition of the jalapeno & eggs that maybe it would end up being a really good dip - not so much. Ok for a sandwich spread.
