- 5 cups rich turkey stock
- 3 stalks celery, cut into 1-inch pieces
- 2 large potatoes, peeled and quartered
- 2 carrots, cut into 1-inch pieces
- 1 onion, quartered
- 1 cup uncooked noodles
- 2 cups cooked turkey, cubed
Companion recipe: Rich Turkey Stock
Prepare the rich turkey stock (see related recipe).
In a 5-quart saucepan, combine the first 5 ingredients. Over high heat, bring to a boil. Reduce the heat, cover and simmer for 1 hour.
Stir in the noodles and turkey meat. Simmer until the noodles are done and the meat is heated through.
