Green Beans with Ham, Bacon and Mushrooms

RECIPE INGREDIENTS
2-3 lbs fresh green beans, washied and ends cut
1 Ham Bone with left-over ham, cubed.
l lb bacon
1 lb mushrooms,cremini or button
2 shallots, diced or 1 medium onion, diced
2 cloves minced garlic
3 tablespoons unsalted butter
2 large onions, sliced in rings,for topping beans
4 tablespoons extra virgin olive oil
bread crumbs for frying onions (optional)
Salt and Pepper to taste.
DIRECTIONS
Place beans, ham bone and ham in a deep pot covered with cold water, cook for 45 minutes under medium heat, lower temp to low when beans begin to boil. Drain, and reserve cubed ham. Set aside. In the meantime, add the butter and and two tablespoons olive oil in a medium size fry pan and add shallots, garlic and mushrooms, cooking until mushrooms have softened and take on a darker color. Set aside. Place bacon slices on a wire rack set on a jelly roll pan, and bake in the oven at 375 until the bacon crisps, about 20 minutes, watch it. Then add 2 tablespoons olive oil in the same pan that you cooked the mushrooms in and fry onion rings dipped into bread crumbs until crisp. Bread crumbs are optional, they will crisp without the breading. When all is done, combine the beans, ham, bacon, mushrooms, shallots and garlic to a 9X13 dish topped with the onion rings. Homemade onions are so much better than the canned! Enjoy.
