Irish Breakfast Pizza. Good for St. Patrick's Day breakfast, lunch or dinner. Or any time you would like a touch of the Irish.
2 refrigerated crescent rolls
1 package Simply Potatoes with onions and peppers
1/2 pound of corned beef from the deli, sliced thin and chopped fine.
1 can German style sauerkraut, drained well
1 pound Swiss cheese, shredded
6 large eggs, scrambled
1/4 cup thousand island dressing
Salt and pepper
Cooking spray
Pre heat oven to 400 degrees.

Spray sheet pan with cooking spray.

Open crescent rolls. Spread rolls out on sheet pan, sealing openings to make a flat crust. Bake crust for 5 minutes, to partially cooked. Remove from oven. Layer potatoes, corned beef and sauerkraut on the crust. Mix eggs and thousand island dressing together, and pour over pie. Sprinkle Swiss cheese over the top. Bake for 20-30 minutes, until eggs are set.

Allow to cool 5 minutes before cutting.
