Italian Stew

This one-pot-wonder is a winter must, warm and full of veggies, and one of my son's favorites. Any of the veggies can be substituted with other frozen or fresh ones, adjust cooking time for frozen ones.
RECIPE INGREDIENTS
2 tbs olive oil
1 & 1/2 pounds Italian sausage flavored ground turkey
1 medium onion chopped
1 stalk celery chopped
1/2 cup chopped carrots
2 large cloves garlic chopped
2 small zucchini chopped
2 cans 10 1/4 oz Italian style diced tomatoes
1 cup chopped frozen broccoli
1/2 cup chopped mushrooms if desired
2 cups marinara sauce
1 cups water or chicken stock
1/2 tsp ground red pepper flakes
1 tsp Italian seasoning
salt and pepper to taste
1 cup Ditalini pasta
DIRECTIONS
Heat oil in large non stick pot or dutch oven.


Add ground turkey sausage to oil and cook medium/high heat, stirring until brown, 3 - 4 minutes.


Add onions, celery, carrots, garlic, cook medium heat, stirring for 4 - 5 minutes.


Add diced tomatoes, zucchini, broccoli, and mushrooms if desired.


Add marinara sauce, water or stock, pepper flakes, Italian seasoning, salt and pepper to taste, cook for 5 minutes, stirring occasionally.


Bring to a boil and add Ditalini. Cook 7 - 9 minutes for desired tenderness, stirring occasionally.


Serve as is or topped with chopped fresh basil and or favorite grated cheese like Romano or Parmesan and toasted Italian bread or garlic bread.
