Lazy Tamale Pie

A great do-ahead dish, this recipe allows you to make your dish as mild or as spicy as you like simply by using your favorite salsa and refried beans. I usually use zesty non-fat beans and a chunky chipolte salsa to make my recipe extra hot.
2 teaspoons canola oil
1 pound of ground beef (or turkey)
1 jar of your favorite salsa
1 can of your favorite refried beans
1 cup of frozen corn kernels
1 small can of sliced olives
2 tubes ready-made polenta
2 cups shredded Mexican blend cheese
Optional:  Sour cream and guacamole
Heat oven to 350.

In a skillet, heat vegetable oil over medium heat and brown meat, breaking it up with the back of a fork to create small pieces, until nicely browned. Add salsa, refried beans, corn and olives, and simmer uncovered until thick, about 15 minutes.

While meat mixture is simmering, spray the bottom of a 13x9 baking pan with cooking spray. Slice 1 polenta tube into 12 even pieces and cover bottom of baking pan with polenta rounds. Spread meat mixture over top of polenta and sprinkle on half of cheese. Slice second polenta round into 12 pieces and cover top of meat mixture with polenta pieces. Sprinkle remaining cheese on top.

You may stop at this point, cover with foil or plastic wrap, and refrigerate your casserole. When ready to heat, uncover and follow directions below, adding about 15-20 minutes more baking time.

Bake uncovered in 350 degree oven for 30 minutes or until dish is bubbling and cheese has melted. Cut into squares and serve with tortilla chips and green salad.

Optional: Top with sour cream and guacamole!
