Lemon and Garlic Marinade

Yield:  Approximately 4 cups (Serves 32)
Lemons and seafood have a natural affinity. This delicious marinade can be used for a whole fish, for fillets, and also in seafood salad dressings or on mixed leaf salads.
RECIPE INGREDIENTS
4 sprigs fresh mint
3 large whole cloves garlic
1  1-inch wide spiral of lemon zest
4 cups white wine vinegar

DIRECTIONS
Place the sprigs of fresh mint, garlic cloves and lemon zest in a sterilized glass jar.


Add the white wine vinegar to cover the ingredients in the jar completely.


Seal the jar and let stand in a warm, bright area for about 10 days (but not in direct sunlight) before using. Store in a cool, dark place. This marinade will keep for about 2-3 months.


Serving size = 2 tablespoons
