Loaded Potato Salad

The tangy, savory salad is picnic-perfect, but quartering the potatoes would make it more fork-friendly.
RECIPE INGREDIENTS
1 carton small,red,new potatoes
1/2 lb fresh or frozen whole green beans
2 hard boiled eggs, chopped
1 medium red onion, diced
5 slices thick sliced applewood smoked bacon, diced
1/4 celery, diced
1/4 cup red pepper,diced
3 Tablespoons toasted, slivered almonds (garnish)
Dressing
1 Tablespoon snipped fresh parsley
3/4 cup good mayo
2 Tablespoons seaoned rice wine vinegar
1 Tablespoon dijon mustard
pinch of red pepper flakes
pinch of sugar

DIRECTIONS
Boil potatoes until tender, not mushy...drain well. Let them cool then cut in half.


Cook green beans tender/crisp then chill in ice bath.


Saute bacon until crisp


Combine everything except almonds and toss lightly.


Dressing


Combine everything and whisk


Pour over salad and toss


Sprinkle salad with almonds
