THIS IS ONE OF MY FAVORITE APPETIZERS & IT ALWAYS MAKES A BIG HIT AT PARTIES.
RECIPE INGREDIENTS
1 CUP  CHOPPED GREEN ONIONS
1 CLOVE GARLIC MINCED
1/4 CUP CHOPPED PARSLEY
1/2 CUP OLIVE OIL
1/2 CUP DRY VERMOUTH
2 TBS RED WINE VINEGAR
1 TSP SALT
1/8 TSP TABASCO
2 TBS DRAINED CAPERS
2 LBS LARGE SHRIMP - BOILED, SHELLED, DEVEINED & COOLED
3 AVACADOS
DIRECTIONS
CHOP GREEN ONIONS, GARLIC & PARSELY IN A FOOD PROCESSOR


MIX IN OLIVE OIL, VERMOUTH, VINEGAR, SALT, TABASCO & CAPERS.


POUR OVER SHRIMP & MARINADE OVER NIGHT IN THE REFRIGERATOR - BASTE & TURN FREQUENTLY.


DRAIN, RESERVING THE MARINADE.


PEEL AVACADOS & CUT INTO CUBES, SAME NUMBER AS SHRIMP.


TOSS IN MARINADE & DRAIN.


YOU CAN SERVE THIS TWO WAYS:


PUT ONE AVACADO CUBE & ONE SHRIMP EACH ON A COCKTAIL PICK & ARRANGE ON A PLATE.


OR


DON'T DRAIN, LINE A PRETTY GLASS SALAD BOWL WITH ROMAINE LETTUCE LEAVES, SPOON IN THE SHRIMP & AVACADO MIXTURE & LET YOUR GUESTS SERVE THEMSELVES.

ok - made this the other day - did the 'avocado + shrimp' in dishes for people... you know that scene where everyone takes a bite then everyone grabs for their water...
