Mandi's Famous Meat Loaf

1 lb Lean Ground Beef
1 lb Ground Turkey
1 lb Ground Pork
2 Eggs
1 cup Italian Bread crumbs
2 tbs butter, margarine, or spread
1 Chopped Red Bell Pepper
1 Chopped Green Bell pepper
1 Chopped Yellow Bell Pepper
1/2 Medium (or whole small one) Red Onion slices
1 Leek in slices
1/4 cup Cilantro
8 oz of Tomato paste
4 oz water
1 tsp red pepper flakes
1 tsp Pizza Seasoning
1 tsp water and cornstarch together
1. Finely chop the red onion, on the leek take out the root part and the darker part ontop, slice the leek to make small rounds about 1/4 inch, then cut down the center for smaller size, Chop the peppers, melt butter in a Medium saute pain and throw in you're veggies. Once they're caramelized remove them from the heat to cool.

2. Preheat oven at about 375

3. In large bowl combined the Beef, Turkey, and Pork with both of the eggs and the cup of bread crumbs make sure they are fully incorporated together.

4. Now incorporate the vegetable mixture with the meat mixture.

5. Take a 9 x 13 pan and lay you're meats and vegetables. Make an egg shape so it's not touching the sides and they're is enough room for the grease to escape and you're meat doesn't drowned in it. Cook for about 30 minutes.

6. In the mean time take 8 oz of tomato paste, water, seasoning, and pepper flakes in a small sauce pan bring to a boil, add about a teaspoon of water and cornstarch, mix then add half of the chopped Cilantro set aside. (time it out correctly so as soon as the meatloaf is drained you can just evenly coat the meat right away)

7. Coat evenly then cook for about 15 - 30 more minutes till it makes a crust then pull out let cool for 5 minutes use last of cilantro for garnish and enjoy :-)
