Marinated Vegetable Salad

A great dish for warm weather, this salad works well with picnic and BBQ fare. It's easy to assemble and keeps well in the refrigerator.
RECIPE INGREDIENTS
1 15 oz Can Garbanzo Beans (rinsed and drained)
1 15 oz Can Pinto Beans (rinsed and drained)
1 15 oz Can Shoepeg corn, drained
1 15 oz Can French-cut green beans, drained
1/2 cup diced purple onion
3/4 cup diced celery
1/2 red pepper, diced
1/2 green pepper, diced
Marinate
1/2 cup canola oil
1/2 cup red wine vinegar
3/4 cup sugar
1 tsp. salt
1/2 tsp. black pepper
DIRECTIONS
Prepare and mix vegetables in a large bowl. Mix marinate and stir until most of the sugar is dissolved. Pour over vegetables and mix thoroughly. Cover and refrigerate overnight, stirring occasionally. Keeps well.
