Mediterranean Dressing with Salad

Yield:  Makes 1 1/2 cups
Serve with bread for a complete meal that is perfect at the end of a hot summer's day.
RECIPE INGREDIENTS
For Dressing:
3 tablespoons olive oil
1 clove garlic, crushed
1/4 cup lemon juice
1 tablespoon wine vinegar
1/2 green bell pepper, chopped
1 onion, chopped
1/2 cup pitted and chopped kalamata olives
1/4 teaspoon pepper
For Salad:
7 oz. Canned tuna
1 pound Canned white cannellini beans
3 cups cooked white rice
DIRECTIONS
TO MAKE DRESSING: Mix together the dressing ingredients in a mixing bowl. If not for immediate use, transfer to a sterilized jar and keep in the refrigerator for up to 3 days.


TO MAKE SALAD: Place the tuna, beans, and rice in a large bowl. Pour the dressing over the top of this mixture. Chill in the refrigerator for several hours before serving. This salad will serve 4-6.


PREPARATION TIP: For variety, in place of a green pepper, you can use yellow, orange, or red bell peppers. Remember to remove the pith and seeds before using.
