My father said these oatmeal cookies were 'the best he ever ate!'
½ c. soft shortening (Crisco, butter, regular margarine)
1¼ c. sugar
2 eggs
1/3 c. molasses
1 1/3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. quick cooking oats
¾ c. nuts (I use walnuts)
1 c. raisins (soaked and squeezed dry)
Preheat oven to 400°. Cream together sugar with wet ingredients. Sift dry ingredients together and add to mixture. Add nuts and raisins. Drop by rounded teaspoon 2' apart on greased cookie sheet. Bake 8 - 10 minutes, or until brown. Cool on opened brown paper shopping bag, and store in covered tin to keep fresh and chewy. Makes 5 dozen.

This is a great recipe with a substitute for brown sugar. Ran out and tried this these disappeared fast. Used pecans and almonds in place of walnuts. My family are oatmeal cookie connoiseurs too.
