Oriental-Style Stir-Fried Vegetables

  Makes 4 servings
1 tablespoon sesame oil
1 medium onion, sliced
3 slices fresh ginger root
2 cloves garlic, cut in half
4 cups broccoli flowerets
2 carrots, thinly sliced on the diagonal
1 red bell pepper, cut into strips
2 cups snow peas
3 tablespoons teriyaki or soy sauce  
Heat the oil in a large skillet or wok over medium-high heat. Add the onion, gingerroot, and garlic. Cook, stirring often, for 2 minutes or until the garlic is golden. Remove the gingerroot and garlic and discard.

Add the broccoli, carrots, and red pepper. Cook for 2 minutes, stirring often, until the broccoli and carrots are tender-crisp.

Add the snow peas and teriyaki or soy sauce. Stir to combine.
