This recipe is a real old time jamaican christmas pudding in the day my grandmother would put the pudding on coal to steam very flavorabe and festive
1lb butter, 1lb sugar, 1lb self raising flour, 1/2 tsp salt,1tsp baking powder, 9 eggs, 1/2 lb rasin, 1/2lb currant, 1/2lb prunes, 1/2lb cherries, 1qrt red  wine, (red lable wine, ray and nephew brand) 2cups white rum (jamaican white rum, ray and nephew brand), 1cup evaporated milk, 1bottle of 8oz stout, 3tlbs  browing, 1 med lemon, 1tsp nutmeg (grated) 1tsp cinnamom powder, 2tsp vanilla.
Wash fruits and drain and put in med. sauce pan, pour white rum and ( remember to leave 1cup of wine for when pudding is done) wine on fruits and steam on low heat for 45 mins, let fruits cool, and blend for 10 sec not blending too smooth, just a little chunky then put aside, Put surgar and butter in mixer on cake mix speed add eggs one by one, then add lemon juice and 1 tsp lemon rind, mix batter until fluffy then stop mixer and start adding flour a little at a time with a spatula until finish, then add stout, evp milk and browing keep mixing with spatula and continue adding the rest of you spices and fruits with the browing, the batter should be med think. heat oven 350 degree this mix should give you two 8" round great tasting plum pudding, bake for 45min to 55 mins when done pour 1/2 cup red wine on top and cover to cool.
