Pita Pickups with Curried Shrimp, Watermelon Mint Salad and Raita

The savory flavors of the far-East are featured in this delicious and easy appetizer. Curry-spiced shrimp are cooled down by creamy cucumber raita, surrounded by a beautiful watermelon salad.
1/2 cup clarified butter
Kosher salt to taste
2 tablespoons spicy curry powder
1 pound raw shrimp, peeled and deveined
1 cup Daisy Sour Cream
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground cayenne pepper
1/2 cup cucumber, minced
4 cups mixed greens
2 tablespoons mint, coarsely chopped
2 cups seedless watermelon, chopped and drained
8 slices pita bread, sliced into 2 inch by 2 inch pieces
In a large, shallow bowl, mix together the butter, salt and curry powder. Add the prawns and toss to coat. Set aside.

In a medium bowl, make the raita by whisking together the sour cream, cumin, coriander, cayenne pepper and cucumber.

In a medium bowl, toss together the mixed greens, mint and watermelon.

Heat a large skillet to high heat and add the shrimp. Cook for 3 minutes or until just done.

Lay pita slices out on a large serving platter and add equal amounts of greens mixture, shrimp and raita to each. Serve.
