Pumpkin Pie Pancakes

Yield:  8 servings
RECIPE INGREDIENTS
2 cups flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
3/4 cup sugar
1 1/2 cup canned pumpkin (or fresh cooked mashed)
3 eggs
1 cup milk
3/4 cups vegetable oil
1/2 teaspoon vanilla
DIRECTIONS
Pre-heat a griddle or skillet. In a small bowl, combine the flour, baking powder, cinnamon, nutmeg, allspice and sugar. In a large bowl, beat together the pumpkin and eggs. Stir in the milk, oil and vanilla. Fold the dry ingredients into the pumpkin mixture.


Pour 1/4 cup batter scoops onto lightly greased griddle or skillet. Cook until bubbles form. Flip and cook other side until bottom is golden brown.


May be held in a 250 degree F oven, covered loosely. Try with sautéed apples or pears.

Delicious
I made these pancakes for my family and everyone loved them. I made some with pecans and some without, would probably toast the pecans first next time. I also used a 1/2 cup unsweetened applesauce in place of the oil to cut out on the fat. You couldn't even tell! Would definitely make these again.
