Some people claim that Stilton is the finest product of the British cheese-making culture. You don't have to like blue cheeses to appreciate Stilton's mellow appeal in this simple, easily prepared spread. A natural for a classy prelude to a special meal.
8 ounces Stilton cheese
16 ounces cream cheese
2 tablespoons sour cream
2 green onions, minced
1/4 teaspoon freshly ground black pepper
For spreading:
Narrow crusty baguette in 1/2 inch slices.
Bring cheeses to warm room temperature. Combine all ingredients thoroughly, reserving a few green onions for sprinkling on top. Chill at least two hours for flavors to blend and then allow to sit for at least half an hour before eating. Sprinkle with remaining green onions.

Note: This simple recipe depends on the quality of its ingredients. British Stilton, full-fat cream cheese and sour cream, and artisan bread are well worth the indulgence in this case.
