Very fast - ready in less than 30 minutes! Fancy enough for guests. Double the recipe and freeze half for an even faster dinner another time.
RECIPE INGREDIENTS
Main Dish
2 chicken breasts, cooked and chopped into bite-sized pieces
1 can 98% fat free cream of chicken soup
½ can water
½ cup applesauce OR 1 apple chopped
2 tablespoons curry powder
1 teaspoon garlic powder
2 cups (cooked) brown or white rice
Toppings
Dry roasted peanuts
Capers
Chopped green onions
Coconut
Raisins or Craisins
Bacon bits
Mango Chutney
Garlic chili paste
Chopped hard boiled eggs
Chopped chilies
Parsley or Cilantro
DIRECTIONS
Boil chicken breasts for 20 minutes or until thoroughly cooked. Slice and cut into bite-sized pieces.


If you don't have rice cooked, cook during the time you are boiling the chicken.


Cook all ingredients (except rice) from Main Dish listing, stirring frequently until it is bubbly.


Serve over rice and sprinkle on any, or all, of the toppings listed above.
