Savory Irish Potato Cheese Cake
3 whole eggs
1 egg white
1 8oz package of cream cheese (room tempature)
8oz shredded irish cheddar cheese
4oz blue cheese crumbles
2 cups Simply Potatoes® Sour Cream and Chive Mashed Potatoes (room tempature)
2 cups Simply Potatoes® Shredded Hash Browns
2 tbsp vegetable oil
3 tsp salt
1 tsp black pepper
1 cup real bacon crumbles (optional)
1 cup sour cream
1.Preheat oven to 350 degrees F.

2.Mix shredded hash browns, 2 tbsp vegetable oil, 1 tsp of salt and 1/2 tsp black pepper.

3.Press mixture into the bottom of a 9 1/2 inch springform pan.

4.Bake for 10 minutes. Cool.

5.In large mixing bowl mix together eggs, mashed potaoes, cheddar cheese, cream cheese, blue cheese, and remaining salt and pepper.

6.Pour potato and cheese mixture onto potato crust.

7.Bake until toothpick inserted in center comes out clean, around 1 hour.

8.Garnish with bacon crumbles.

9.Let cool slightly and slice in to wedges.

10.Serve cheesecake warm with sour cream.
