Spanish Rice

This dish, for some reason, became a Christmas Eve favorite for our family. Now we just like it anytime.
RECIPE INGREDIENTS
4 c. cooked white rice
1 lb. hamburger
1 med. yellow onion, chopped
3-4 ribs celery, chopped  (If you don't want to use celery, use celery seed for flavor, or just leave it out)
1 green pepper, chopped
1 28-oz can diced tomatoes
2 16-oz cans tomato sauce
1 4-oz can sliced olives
1 c. Pace picante sauce, mild
2 T. chili powder
1 T. chopped garlic
1 tsp. cumin
salt, to taste
pepper, to taste
2 c. shredded cheddar cheese
DIRECTIONS
Crumble fry hamburger till brown. Drain.


Add onion, celery and green pepper. Saute till tender.


Add tomatoes and tomato sauce, picante sauce, olives and spices. Bring to simmer and reduce heat. Cook 20-30 minutes until flavors have combined and sauce is thick.


Add rice, stir until well blended.


Pour into cassarole dish and cover with cheese.


Bake in 350 oven 30 minutes or until cheese is bubbly and brown around edges.
