- 1 1/2 cups chicken broth or water
- 1 tablespoon unsalted butter
- 1 cup quick-cooking couscous
- 1/4 cup toasted sliced almonds
- 1/4 cup golden raisins
- 2 tablespoons chopped fresh mint, parsley or cilantro
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- Pinch of cayenne pepper
In a saucepan over high heat, bring the chicken broth or water and the butter to a boil. Stir in the couscous and cover the pan. Remove the pan from the heat and let stand for 5 minutes.
Transfer the couscous to a bowl. Using a fork, fluff the couscous lightly. Add the remaining ingredients and stir with a fork to mix.
