Sunrise to Sunset Smoked Salmon Casserole

Creamy smoked salmon and hash brown casserole perfect for breakfast, brunch or dinner.
Non-stick cooking spray
4 large eggs
3 ounces cream cheese, room temperature
1/4 cup milk
1 package SImply Potatoes Shredded Hash Browns
3 ounces chopped smoked salmon
1/2  cup chopped green onion
1/3 cup freshly grated Parmesan cheese
1 teaspoon medium coarse sea salt
1 teaspoon paprika
1/3 cup creme fraiche or sour cream
2 tablespoons prepared horseradish
Preheat oven to 375F.

Spray a 11x9x2 inch baking pan with non-stick spray.

In large bowl beat eggs, cream cheese and milk with mixer until blended.

Stir in potatoes, smoked salmon, green onions and Parmesan cheese, transfer into baking dish; sprinkle salt and paprika over top and bake uncovered until golden about 35-40 minutes.

In a small bowl whisk creme fraiche or sour cream with horseradish.

Cut casserole into wedges and serve with a dollop of horseradish mixture.
