Sweet Tropical Loaves

For the Loaves:
In a mixing bowl, combine the first five ingredients. Beat on low speed just until moistened. Beat on high for 2 minutes. Stir in the coconut.

Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 325 degrees F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For the Glaze:
In a mixing bowl, combine the sugar and milk until smooth. Add the extract if desired. Drizzle over loaves; sprinkle with coconut.
