Sweet Corn Cakes
• 1 ½ cups of frozen sweet corn
• ½ cup butter (1 stick, softened)
• 3 tablespoons of sugar
• 1 pinch of salt
• ½ cup corn flour (masa harina flour)
• 2 tablespoons all-purpose flour
Chipotle Sauce
• ¼ cup of Daisy sour cream
• ½ tsp of minced garlic
• Pinch of onion powder
• 1 tablespoon of chopped thyme
• 2 tsp Chalula hot sauce
• 1 tsp cayenne pepper
• 1 tsp black pepper
• Salt to taste

Tamale cakes

1. Preheat oven to 400F

2. Prepare the tamale cakes by chopping 1 cup of the frozen corn in the food processor until coarsely pureed. Add butter, salt and sugar. Blend well.

3. Add corn flour and all-purpose flour. Blend well.

4. Mix in the remaining ½ cup of corn kernels by hand.

5. Measure ½ cup portions of the mixture and form into 3” patties with your hands. Arrange the patties on a baking sheet and bake for 25-30 minutes or until the cakes are golden brown on the bottom.

6. Carefully flip all cakes with a spatula and bake for an additional 5-7 minutes or until other side is brown.

Chipotle sauce

1. In a medium bowl combine all ingredients with the exception of salt. Add desired salt to taste.

2. Place the cakes on a serving plate and dollop a tablespoon of chipotle sauce on top of each cake and enjoy!
