Nothing warms you up more quicker than a bowl of my piping hot chili. Great on those cold winter nights. Certainly a favourite to bring to your next potluck or games night.
2 tablespoons Olive oil
1 lb. ground beef
6 strips bacon, diced, cooked and drained
2 cups onions, diced
1 cup green pepper, diced
1/2  cup celery, diced
1 cup sliced button mushrooms
4 tomatoes, skinned, seeded and diced
6 cups tomato sauce
1 can (19 oz) red kidney beans, rinsed and drained
3 tablespoons chili powder
1/2 teaspoon cumin powder
1/4 teaspoon Tabasco sauce
2 garlic cloves, minced
1/2 teaspoon poultry seasoning
1/2 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/2 cup shredded old cheddar cheese for garnish
In large pot heat oil. Add ground beef and cook till brown. Drain off fat. Crumble into bite size pieces.

Add bacon, onions, peppers, celery and mushrooms. Cook till tender.

Add tomatoes, cook for 2 minutes. Stir in tomato sauce, kidney beans and bring to a boil. Reduce heat to simmer.

Add remaining ingredients except cheddar. Simmer 3 hours, stirring occasionally.

Serve, Garnish with cheddar.
