My mother made this cake for my family on each of our birthdays. It’s a variation of the traditional Red Velvet Cake, but I’ve never had a Red Velvet Cake that I liked as well as this recipe. I grew up eating this cake, so I’m sure that I'm biased. I've b
3 Tbl strawberry Nestle Quick. Yes, this is one of the odd ones.
2 oz red food coloring. My husband insisted we use just 1 bottle when we last made this recipe and substitute water, and it worked fine. It was still very red.
1-1/2 cups sugar
1 cup butter
1/4 tsp salt
1 tsp vanilla extract
2 eggs, well beaten
2-1/2 cups sifted flour
1 cup buttermilk
1 tsp baking soda
1 Tbl vinegar
This frosting is so much better than the traditional cream cheese, in my opinion.
1 cup milk
5 Tbl flour
1 cup butter
1 cup sugar
1/2 tsp rum flavoring
1/2 tsp vanilla extract

Mix Nestle Quick and the food coloring, set aside. Cream sugar, butter, salt and vanilla. Add the eggs, then the food coloring mixture and beat well. Add flour alternately with the buttermilk. Add baking soda and vinegar. Beat well. Pour into 2 greased 9 in cake pans. Bake at 350 for 30-35 minutes.

Add flour and milk to a pan. Stir until paste-like over low heat. Cool, so it is cool to the touch but not cold. Cream together butter and sugar. Add flour mixture, rum and vanilla. Beat well. Spread evenly over the cooled cakes.
