This is a recipe handed down to me from my mother who got it from her mother. It is easy to mix the dry ingredients ahead and add wet ingredients when you wish to make them.
2 eggs
1 1/2c. milk
2 1/2c. all purpose flour
4 tsp baking powder
1/2 tsp salt
1 tbs sugar
3 tbs butter or cooking oil
1 tps vanilla extract
Heat waffle iron,pan,or griddle. Beat eggs add vanilla,melted butter or oil set aside some butter or oil to grease pan etc. Sift flour,baking powder,salt,and sugar. Slowly add dry ingredients to wet ingredients mixing until blended. Do not beat. It is best if mixture sit about 5 minutes for the baking powder to act. Pour mixture into or on heated greased.pan etc. and bake. If using as pancakes when bubbles come to the top flip for about 30 seconds or until bottom is golden brown if using as waffles about 3 minutes.Use your own ideas as to what to top with butter,sugar,pancake syrup,honey,or jams etc.

Simple, quick and tasty
