Easy & delicious Welsh Rarebit recipe written & used by me!
25g/1oz of butter or olivio
25g/1oz of flour
175ml/6oz cheddar cheese freshly shredded
150ml/5fl oz of brown ale such as Guiness
1tsp English Mustard (recommend Coleman's)
2tsp Worcestershire sauce
salt & pepper to taste
2 egg yolks
12 slices of brioche, croissant or flakey type of bread preffered over regular bread
1. Make a roux: melt butter in a lowly heated sauce pan add flour slowly as butter melts constantly whisking it. Boil milk seperately and mix into roux while constantly whisking it (get rid of lumps)

2. Add cheese, once the mixed throughout remove from heat.

3. in a seperate sauce pan reduce the ale, mustard and worcestershire sauce. When thicker(er) add this mixture to the roux.

4. Season roux with salt and pepper and beat in the 2 egg yolks.

5. heat the oven to 350 and toast the brioche for five minutes or so till lightly toasted.

6. Spoon the mixture onto the slices of brioche (can sprinkle a little grated cheese over the mixture to crisp) put in the oven till the mixture is bubbling or the cheese on top of the mixture is crispy.

7. Let cool and enjoy
