Yellow Split Pea Soup

  Makes 8 cups (Serves 8)
1 pound dried yellow split peas
2 quarts water
2 teaspoons dried thyme
1 medium onion, chopped
2 carrots, peeled and chopped
2 leeks, trimmed and chopped
2 stalks celery, chopped
Soak the split peas in water to cover overnight, then drain and rinse. Or simmer peas for 45 minutes in boiling water; drain.

Place the peas and the 2 quarts fresh water into a saucepan. Add the remaining ingredients and simmer until tender, approximately 1-1/2 to 2 hours. Stir occasionally.

Puree the soup in a food processor until smooth.

Serving size = 1 cup
