Side Yam Dish
RECIPE INGREDIENTS
Back in the 1960's my old aunts used to make this dish for Thanksgiving and other holidays.
Get out a large mixing bowl. Oven temperature 350º
1 Large Can of Yams - (cut them in smaller pieces as they tend to be big hunks)
1 Can of Whole Cranberries-not the Jelly ! (Ocean Spray) Sometimes customers mix up
the cans on the shelves as they look the same so be careful when selecting)
1 1/2 Cup Dark Brown Sugar
1 Tsp. Salt  (to taste)
1 Tsp. White Pepper (to taste)
1 Tablespoon Tarragon
1 Tablespoon good quality Cinnamon
1 Tablespoon Oregano
3 Slices of white stale bread, or one sleeve of Ritz Crackers crushed into crumbs
1 Stick of unsalted butter
DIRECTIONS
Combine all the above ingredients, except the butter, into one large bowl.


Wash your hands and dig in mixing the entire gloppy mess until all is incorporated.


Spread this well mixed concoction in a large pyrex dish and dot with the stick of butter


cut up in pieces and distributed over the entire surface.


Bake until bubbly and serve hot.


Absolutely a show stopper and it will disappear leaving guests asking for more.
