Adaptable Potato Salad

This recipe can be doubled as well. I recently made this for a wedding rehearsal dinner and also a large family get together and both times people raved about it and said that it was the best potato salad they had ever tasted!
6 pounds of red potatoes
1-1/2 large onions
15 hard boiled eggs
salt and pepper to taste
3 cups mayonnaise
1/4 cup plus 1 tablespoon prepared yellow mustard
Peel and boil potatoes. Drain and cool. Cut up into cubes.

In a large bowl add cut up potatoes, sliced eggs,and chopped onion.

Mix mayonnaise and prepared mustard and add to potato

mixture. Add salt and pepper to taste.

To provide colour and extra flavor I also add some or all of the following: cut up radish, green onions, sweet pickle relish, english cucumbers, grated carrot, small grape tomatoes (cut in half) and whatever else you choose.
