A little of this goes a long way! Peanuts and sherry are good together, as are raisins and sherry. I added the corn because I had a leftover ear, to make this a salad. It tastes pretty sweet, so is best used as a dessert.
RECIPE INGREDIENTS
One large ear of corn
1/2 cup peanuts
1/2 cup raisins
1/4 cup sherry wine
DIRECTIONS
Boil or steam the ear of corn. Cut niblets from the cob.


In a non-reactive glass or ceramic dish, mix together corn niblets and peanuts and raisins. Pour over all the sherry wine and stir to coat. Cover dish and refrigerate overnight. Serve as a dessert salad.
