Ally's Special Chicken Salad

My children have enjoyed this chicken salad, now my 1 year old grandson is a huge fan. It is very easy to put together and goes well with crackers, melba toast or as a sandwich. If serving to friends, scoop on a piece of lettuce and serve with fruit.
RECIPE INGREDIENTS
I Large Boiled Chicken Breast
1 Celery Rib
1 Sweet White Onion
2 Boiled Eggs
Mayonnaise
Mustard
Dill Pickle Juice or Lemon Juice
Seasonings: Salt, Pepper, Onion Powder and Celery Salt (optional)
DIRECTIONS
Active Time: 15 minutes


Cook Time 25 - 45 Minutes


Boil Chicken in seasoned water, such as salt and pepper for at least 25 minute, longer if frozen. If you have other seasonings, onion powder and celery salt, add those too. Boil the two eggs for 5 minutes and cover and let sit in water for five more minutes. Peel the eggs and let cool. (I normally boil my chicken and eggs the night before, and refrigerate.)


Wash celery rib and give a rough chop and give a rough chop to a peeled onion. Place in a mini chopper or a food processor and chop finely. (If you do not have these, chop finely with a knife. Remove celery and onion, add the eggs and chop them up, then chop up the chicken breast. Minced is fine for all of the above. Remove the chicken and place in a bowl with the celery, onions and eggs. Taste and see if the chicken is seasoned to your liking. ADD seasoning if necessary.


Stir together the mayonnaise, dash of mustard and about 2 teaspoons of pickle or lemon juice. Then add to then chicken mixture and mix well. We love this combination and mincing all the ingredients make for a smooth spread for bread or crackers.
