This is a tasty variation on classic creme brulee incorporating a subtle rich nutty flavor.
1 cup heavy cream
2 tablespoons sugar
2 large egg yolks
1/2 teaspoon almond extract
1/2 cup brulee sugar
1/2 cup finely processed almond crumbs
4 cups water
1/4 cup roasted almond slices (optional garnish)
4 teaspoons brandy (optional presentation)

Preheat oven to 300 degrees

Boil water

Combine cream and 2 tablespoons sugar over medium heat until small bubbles appear around edges of pan, 5-6 minutes.

Beat egg yolks and almond extract until smooth and light. Pour hot cream mixture very slowly into egg yolks while beating continuously. Continue beating until well blended. Strain mixture through a fine sieve into a bowl. Divide into four 4 oz. ramekins or small earbowls. Arrange bowls in a roasting pan or other vessel and fill pan with boiling water half way up the sides of the ear bowls or ramekins. Bake for about 25 minutes depending on which bowls you use. Custard should just be set. Chill ramekins or ear bowls until completely cool, about three hours.

Combine brulee sugar with almond crumbs and sprinkle evenly over the top of the cooled custards. Use a cooking torch to melt the sugar/almond toping to a golden brown. Serve immediately.

Optional garnish: place one or two roasted almond slices attractively on top of each.

Optional, float a teaspoon of brandy atop the torched topping and light it at tableside.
