A family favorite
3/4 lb ground almonds
1 cup granulated sugar
10 eggs - separated
tsp vanilla
grated lemon rind
Preheat oven to 350 deg.

Beat egg yolks with sugar until light lemon colored.

Stir in vanilla and grated lemon rind. Slowly stir in almond 'flour'. Mixture will be stiff. Beat egg whites to med, stiff peaks. Lighten egg yolk mixture with some of the egg whites. Carefully fold in the rest of the egg whites. Pour into ungreased tube pan and bake 40 to 45 min on bottom shelf of the oven. Remove from oven and invert to cool. Serve with whipped cream.

Ground Almonds ARE the flour!
If you read the recipe carefully, it mentions ground almonds and then references the almond "flour." Clearly, the ground almonds ARE the "flour."
