Apple Cider Roasted Sweet Potatoes and Yams
- 1 tablespoon Wild Oats Extra Virgin Organic Olive Oil
- 3 tablespoons fresh apple cider
- 3 teaspoons pumpkin pie spice
- Salt and pepper
- 2 organic sweet potatoes, peeled and cut into spears
- 2 organic yams, peeled and cut into spears
Preheat oven to 425 degrees F.
Whisk together the olive oil, cider, spice, salt and pepper. Toss this mixture with the potatoes and yams. Lay potatoes out in a single layer on a baking sheet and roast for 25 minutes, or until browned on the edges and can be easily pierced with a fork.
