Apple Hill Pancake
- 3 eggs, slightly beaten
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 teaspoon lemon rind, grated
- 1/2 cup all-purpose flour
- 5 tablespoons butter, divided
- 1 tart apple, such as Granny Smith
- 1/4 teaspoon cinnamon
- 1/4 cup sugar
- Confectioners' sugar for garnish
In a medium bowl, combine the eggs, milk, vanilla and lemon rind. Whisk in the flour until blended. Batter will be slightly lumpy.
Preheat the oven to 400 degrees F.
Melt 1 tablespoon butter in a 10-inch pan over medium heat. Add the apples and sauté until tender. Fold the sautéed apples into the batter and pour into a greased baking dish or pie pan. Bake for 20 minutes.
Meanwhile, in a small bowl, combine the cinnamon and sugar. Melt the remaining 4 tablespoons butter. When the pancake has baked 20 minutes, remove from the oven and quickly sprinkle with the sugar mixture and drizzle with butter. Return to oven for 5 minutes. Serve immediately, dusted with confectioners' sugar.
