Apple Sausage Puff Pancake
- For the Pancake:
- 1 1/2 cups all-purpose flour
- 6 tablespoons sugar
- 3/4 teaspoon salt
- 1 1/2 cups milk
- 6 eggs
- 6 tablespoons margarine or butter
- For the Filling:
- 1 pound bulk maple-flavored sausage
- 1/3 cup margarine or butter
- 1/2 cup packed brown sugar
- 1/2 cup maple syrup
- 3 medium apples, such as Granny Smith, thinly sliced
FOR THE PANCAKES:
Preheat the oven to 425 degrees F. In a medium bowl, combine all the ingredients except the margarine. Beat until smooth.
Place 1 tablespoon of margarine into six 2-cup ramekins, and heat in a preheated oven until the margarine is melted. Carefully pour the batter into the hot ramekins. Bake for 14-18 minutes, or until puffed and golden brown.
FOR THE FILLING:
While the pancakes are baking, cook the sausage; drain and set aside.
Melt the margarine in a pan; add the brown sugar, syrup and apples. Sauté until the apples are tender, but not soggy. Add the sausage and heat through.
Scoop the filling into the middle of each baked puffed pancake. Serve Immediately, as they fall quickly.
