Apple-Turkey Pita Pockets
- 2 cups cooked turkey breasts, cut into 1/2-inch cubes
- 2 red tart and juicy apples, cored & chopped
- 1/2 cup celery, chopped
- 1 can (8 ounces) crushed pineapple, drained well
- 1/3 cup lemon yogurt
- 1/4 cup non-fat mayonnaise
- 1/2 teaspoon Dijon-style mustard
- 1/4 teaspoon celery seeds, crushed
- 4 5-inch pitas, tops cut
- 4 lettuce leaves
In a medium bowl, combine the turkey, apples, celery and pineapple.
In a small bowl, combine the yogurt, mayonnaise, mustard and celery seeds. Fold the dressing into the turkey mixture.
To serve, line each pita with a lettuce leaf and spoon 1 cup turkey mixture into each pita.
