Asian Salmon and Shrimp Soup

Fantastic low calorie main course, loaded with healthy, tasty ingredients.
RECIPE INGREDIENTS
3/4 cup uncooked long grain rice
1/2 pound salmon fillet, skin removed cut into 8 pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
10 cilantro sprigs
1 cup cilantro leaves for garnish
1 1/2 tablespoon peeled, minced ginger
1 teaspoon salt
32 ounces chicken broth
1 cup water
3 scallions sliced-green and white parts
3/4 pound peeled medium shrimp
DIRECTIONS
Bring a medium pot of salted water to a boil


Stir in the rice and boil for 8 minutes


Drain rice and set aside


Coat the salmon with the sesame oil and soy sauce and marinate for 1/2 hour


In a large pot combine the cooked rice, cilantro sprigs, ginger, salt, broth and water. Bring to a boil and simmer covered for 15 minutes.


Add the salmon and the marinade to pot. Simmer until the salmon is cooked, about 5 minutes


Add the shrimp and cook for another 4 minutes


Remove the cilantro stems


Add the cilantro leaves and scallions


SALT AND PEPPER TO TASTE.
