Healthful salad for spicy tuna lovers. Especially great for those that love the taste of spicy tuna rolls, but would love to avoid the carbs and prep time of rice.
1 can albacore tuna (packed in water, drained)
2 tablespoons Hellman's Light Mayo
1 tsp Siracha hot sauce (more to taste)
1 tsp sesame oil
5 oz baby asian greens (2 prepared bags)
1 red bell pepper, julienned
1 cup shoestring cut carrots
1 can water chestnuts
4 scallions, white and green parts sliced
1/4 cup cilantro, coarsely chopped
3 T seasoned rice wine vinegar
1 T soy sauce
1 T sesame oil
Combine the tuna, mayo, siracha & 1 tsp sesame oil in a small bowl. Mix well.

Whisk together rice wine vinegar, soy sauce and 1 tablespoon sesame oil as dressing.

Assemble salad by layering greens as base and topping with carrots, peppers, chestnuts & scallions. Add neatly scooped portions of tuna, sprinkle top with chopped cilantro, and drizzle with dressing. Garnish plates with additional siracha, if desired.
